When he’s not in the operating theatre, Dr Pokorny can often be found in his kitchen, nurturing a sourdough starter and perfecting the art of slow fermentation. A highly qualified, New Zealand–trained urologist, Dr Pokorny brings the same precision, patience, and scientific curiosity to breadmaking as in medicine.
Of course, medicine comes first but his passion for creating beautifully textured, flavourful sourdough loaves comes a close second.
Warm, methodical, and encouraging, Dr Pokorny believes sourdough is both an art and a science and that anyone can master it with the right guidance.
